Butt questions - after the cook

What I need to know is:
1) What are your favorite sauces to serve with the butt?
2) What side dishes are best to serve?
3) What is the best way to store it and reheat it? [p]I did my first the other day (a 4 lb. butt). The cooking directions worked perfectly. Thanks for all the help.

    1) What are your favorite sauces to serve with the butt?[p]The sauce I like is listed on my website (http://www.tm52.com/bge/) and is home made. JJ's dippin sauce is awful good too.[p]
    2) What side dishes are best to serve?[p]Baked beans are good.[p]3) What is the best way to store it and reheat it? [p]We freeze some of the pulled pork. Later just reheat on the stove in a sauce pan with sauce or nuke it in a bowl. It reheats very easily.[p]

    I like the thinner vinegar based sauces to have on the side... just sprinkle a little over the steaming heap o' pork to taste. I believe Elder Ward has a good recipe in his dissertation on how to cook in the recipe section.
    Cole slaw, baked beans and cornbread to sop it all up is my favorite combination of sides.

    I'm with you. Just made Elder Ward's sauce for New Year's Eve and it was great. Prefer the vinegar base over the tomato base ones for pulled pork.

    Razorback,[p]Two other standards for eating with your pork are German Potato Salad, & Cold Slaw, with a good dose of Horseradish!

    Yeah, the tang of the vinegar and heat of the pepper compliment the flavor of the pork well.[p]I just checked into the recipe section to reread some of Elder Ward's thoughts. It really is a good read and gives an authentic look into the North Carolina BBQ tradition.
    Nice of him to take the time and compile all of that for us folks.

  • Razorback,[p]Number 1 & 2 I can't answer, I am still learning. But I did pick up a tip (from the forum) on number 3 that really works (sounds like others don't but that isn't the case at all!). I freeze my leftovers in meal size portions in a zip lock bag. When I want to eat them I just break the seal and microwave in the bag on half power till warm. They are nearly as good as the first day.[p]This system works so well that I have only done one butt once, the rest of the time I cook 20 pounds and freeze. I will repeat this again on Saturday. This also allows me the share the leftovers with distant family![p]My two cents at a fraction of the cost![p]Buckeye Bill

    2. 'Slaw on the the sammich, plain 'ol potato chips, hushpuppies, and a tall, home made Lynchburg lemonade.[p]My Lunchburg Lemonade Recipe:
    1.5 shots Jack Daniels
    .75 shot triple sec
    1 shot sweet/sour mix
    4 shots 7up or sprite
    ice & lemon garnish[p]ummmmmmmm, I can almost taste it......[p]Jeff
