butt question

im cooking an 8 lb. butt today. The thick skin/fat on top, should I remove it before the cook or leave it on? I should have paid more attention at the eggfest but I was too busy eating! Thanks

That's timing!! I am finishing mine now and I left the fat on and placed it fat side up on the grill..... good luck.

<p />billysbbq,[p]Tell me a little more. Is it a fat cap or the skin on a picnic??[p]The fat cap goes up. Score it really well with a sharp knife so the heat melts it easier. If it's the skin on a picnic - I remove it and trim some of the fat under away. Some leave it on - but I did once and didn't like it. Now I take them off.[p]Tim
