Thursday night again tomorrow which means football coaches, beer, and something on the Egg. Last thursday ended miserably when my egg turned over and busted while I was rolling it home. Needless to say the new one is not leaving my porch tomorrow.

I have read that some people will put on an inverted plate setter after the the sear. What is the idea behind this and when should you use it?
