Doing First Butt

I'm apparently in the plateau with a dome temp of 230 and internal of 164. It hit 161 about 4:30. When do I need to kick the temp up to 300? This is a 7.6 lb butt; how much longer should it take. Began last night at 8:00.

My advice would be to let it alone unless you are on a tight time frame. It's acting normal.

Any thoughts on when it will be done if I leave it as is. Planning to eat about 4:00 this afternoon.

Don,[p]Hang in there; you're doing fine! Remember, the slower you go the better it'll taste. Depending on the distribution of fat and bone (if it has one) a butt can take up to 2 1/2 hours/pound, although mine have usually run closer to 2 hours/pound. That puts you near the finish line at noon or so, which gives you plenty of room before PigOut time.[p]Cheers,[p]David

Right now, my guess is you'll eat right around then. Internal temp really is best at 190º - 200º. You can boost the temp up if you want. Good luck.
