    Elmo,
I usually do them on the stove in a skillet but it's easy to adapt to the egg. I saute in butter after dregging in flour kicked up with DP's Raging river rub. I use a cast iron skillet direct at about 350/400. It will not take them long to cook. Good luck, Tom

    Elmo,
I may be able to help, growing up in Fla, and teaching diving, we always had fish and some folks just didn't care for it. I haven't tried this on the egg but you could adapt it pretty easily. My boys ate this for four days straight(their request) until I told them they had to eat something different for supper. [p]Cook your fish with normal spicing, S&P, and a squeeze of lemon, at about 325F. about 5 mins before its done, top the fish with a slice of cheese, and then a layer of mayo, and then top with crushed potato chips, fritos, doritoes, cheeze curls, or whatever you have available. Put fish back on for about another five mins and let everything cook. When we cook it in the oven, we broil it for a min or two to brown the topping. I believe it was Fishlessman who told me a way to broil in the egg using a pizza stone, but I can't recall how to do it. Hopefully some one will chime in. But this is a great recipe that I always used for folks that didn't like fish. You'll love it! HTH.

Elmo,[p]My wife puts pecans or almonds in a chopper or food processor. Once the nuts are finely ground she dredges the fish lightly in milk/buttermilk, flour (seasoned with salt & pepper) then the nuts. We fry it in a skillet at 375 for 3 minutes per side. When the fish is done we put a few more nuts & a squeeze of lime or lemon on the top of the fish and then serve it up.[p]I do not like fish but I love Tialpia this way.[p]Kim Youngblood

Elmo,[p]Tilapia is a simple fish to cook. The most basic way is to cover it with a little oil of any kind and a rub of any kind...Dizzy Pig, Prudhomme's Blackened Redfish Magic, etc. Use a grilling pan...or not. Cook direct at about 450 for 2 1/2 to 3 minutes per side. If I'm in a hurry I cook them under my oven broiler in an oven-safe pan for the same amount of time. Fish tacos are my prefered way of serving...Flour tortillas, red cabbage, cilantro and a chipotle mayo. Mixing Tapatio Hot Sauce with ranch makes a nice topping also if you don't have time to make the chipotle mayo.

    Elmo,
Here is what I do. Cut up some red, yellow, orange peppers and a sweet onion. 3 cloves of chopped garlic, and a big chunk of butter. Wrap up in foil real tight. Throw on 400* egg. Cut several slices of lemon about 1/4" thick, enough to cover area that fish will need on grill. After peppers have been on for about 5 minutes, place lemons on grid, fish on lemons with salt, pepper, and a little olive oil and cook till done. Remove peppers and fish and plate fish and then cover with peppers. Pour over a little of the juice from the aluminum foil pack, and dig in. "Better than in any resturaunt" is what I heard last time I fixed this. With the different color peppers it is a very attractive dish too. White rice on the side works well too. Hope this helps. <p />Elmo, [p]Try the Stuffed Tilapia from COSTCO’S. It's a tilapia fillet wrapped around a really good seafood stuffing. About 3 to a pkg.
Direct setup with raised grid, perforated pan – spray with PAM.
I use guava wood and/or cherry. Stabilize at 300º dome
Sprinkle with Dizzy Dust and/or Ragin River rubs.
Bake for 30-40 Min, rotate pan if necessary. Pull at
    Internal temp @ 140º.

You won't be disappointed. No fishy taste, I promise.
