I just took my tukey out of the brine but will not be cooking it for another 3 or 4 hours, should I leave it covered or uncovered it the fridge untill that time.

    Most "modern" refrigerators include a dehumidifier in their air circulation circuitry - that's what makes 'em "frost-free." Imho, 3 to 4 hours uncovered shouldn't present a problem, in fact it should air-dry the little feller just fine.
