Turkey cavity question

Hi,
I am doing my holiday turkey tomorrow (that is when my guest will arrive) and was wondering about the post that recommend putting things like apple halves and/or orange parts in the cavity of the bird. What flavor is given and do you eat the used parts or are they only for flavor and aromatic enhancements.
Thanks,
New Bob

  • New Bob,[p]My wife always put a peeled onion in the turkey cavity and I have blindly followed her example. Not sure exactly what flavor it gives - at least I can't taste it, but I'm sure it inparts some.[p]Wish I could be more specific....[p]Kelly Keefe

New Bob, the orange will flavor the bird, but everyone seems to like it. I just poke a couple of small holes in one and put in with apple pieces. JCA

    J Appledog,
    Thank you,
Do you also eat the orange and apple slices or throw them out after the cook??????

    New Bob,
Yuk; throw it away! And drain the OJ out of the bird. JCA

    Kelly Keefe,
    Thanks,
I was wondering if the onion would give the bird a real strong onion taste, doesn't sound like it. Maybe just a little to start with.

    J Appledog,
    Wow, I get the point.
Can you tell I have not done this before. *Big Grin*
    Your help is appreciated.

New Bob,[p]The cavity of the bird is shielded from the meat by the membrane, thus the juices of the stuffing do not baste the meat. The flavoring is as a aromatic applied for the entire cook. The meal tastes better, but the taste cannot be defined.[p]The stuffings are discarded.[p]Spin

    New Bob,
I did my Christmas turkey and I used Citrus Splash.went out to my orange tree and picked 3 oranges.I peeled them and put them in the cavity.I used some wine barrel chips for the smoke, and I have to say it was the best turkey I have eaten. The orange flavor was evident throughout the bird. The purpose of putting something in the cavity, apples, oranges, onion, celery, etc is mainly to help add moisture to the bird.I liked theornges because of the flavor. The juiciest bird I have ever had and I did not have to brine it.

  • New Bob,[p][p]Only a newbie at this - have done two birds so far - stuffed the cavity with as much apple and onion, quartered, as it could hold. Have wanted to use oranges, just never had any on hand.[p]
Could not taste any apple or onion in the meat - which, by the way, came out as the juiciest bird I've ever stuffed in the pie hole. So I gather it helps with the moisture content.[p]
I do want to try the oranges some day - wonder if the citrus would carry into the meat?[p][p]Just my .02 worth.[p][p]LVM[p][p]

    Gooba,
Sounds like a great cook, it nice to get all this great input. Tomorrow should be interesting, hope I don't end up over doing it. This how we learn. Thanks for your input.

    Gooba,
I have used Citrus Splash many times now. How did you use it (marinade, brine)? Thanks

    Fireball,
I did not have alot of time,so I injected it into the meat and let it sit for 30 min.
