When you use parchment paper on your pizza peel so the dough does not stick do you then slide the dough with the parchment paper on the pizza stone so that when the pizza cooks it's still on the parchment paper?

bighound, Yes, just like Ross says. Notice how he trimmed the parchament paper just a little larger than the Pizza. Excess will burn and drop a little ash.

Ross in Ventura,[p]Can you tell me how you keep your crust from contracting? My grandson (Pizza Zack) and I used Trader Joe's pizza dough. After stretching it and while spreading the sauce, it kept shrinking in size. The final product was GOOD but a little on the small size due to the contracting dough.[p]Any hints you can give us would be most appreciated.[p]Regards,

Susan Egglaine,[p]Yeah, that had to be him; my tall, blond 10 yr old grandson. Once he saw pizza he was like a leech and never left. He was most interested in seeing how others were cooking as he had been taken under Lucky Duck's wing at the Eggs by the Bay Fest where he cooked 8 pizzas on his own.[p]We cooked 4 pizzas at his house this weekend when we ran into the shrinking dough.

Fidel,[p]That had to be the problem. We took the bags of dough from the frig and placed them in a bowl of warm water. The first bag worked reasonably well but the second bag didn't. It would have been quite a bit cooler than the first thus explaining the increased shrinkage as we proceeded.[p]A cigar to you my friend,

Yes, that was him, he seemed much older than 10. We do not have any places around here that sells dough. I have been making my own and they have turned out well thanks to the heat from the wood stove! Say hi to Zack and keep a bakin!

I use a pizza screen for the first few minutes. I also make the pizza on the screen. I like to take the pizza off the screen and directly finish it on the stone.
