after I take it off, what is the best way to pull the pork? I am wanting to make sandwiches. Do I need to apply BBQ sauce or do I just have the sauce sitting on the table for people to use if they wish? Also, I have two butts with the bone in, the total weight is 10.75 lbs. How many people will this feed. I'm expecting between 20 and 30 and I have a pork loin roast that't just dying to be cooked if need be.

Washog,[p]I like to allow a 15 minute rest and then shred it with a fork. Gloves are useful :-). The finished meat will shred into long strips. Remove any fat that may be there during the shredding process. These long pieces are very nice for dipping in a sauce. Cutting the strips down will produce what is used for sandwiches.[p]I like to provide several sauces for people to use as they wish.[p]A nice PP sandwich is made from 5 oz. of finished pork. You should have around 20-24 sandwiches. You will lose 35-40% of the weight of the raw meat during cooking.[p]Spin

I let it rest for awhile in foil until it's not hot enough to burn but still eatin' hot. I get a big plate of Texas sized sesame buns ready. I squirt a little Q sauce on each side of the bun, pile on the pork and top off with cole slaw (gotta have your veggies!). Stop eatin' while you still have two chambers of your heart working![p]Another thing I like to do with pork butt is to throw it in a food processor and turn it on. Throw in a little garlic powder and any other creative stuff you'd like. I like throwing in sweet Vidalia onion. Squirt in your favorite BBQ sauce while it's doing it's thing until it reaches a thick paste consistancy. I call it Pork Butt Pate`. Use it for a dip, sandwich spread, baby food, etc. GOOD STUFF!
