I'm trying something different. Bought me a 13 pound fresh turkey and cut it into six pieces, soaked them overnight in a brine solution I found on an earlier post. I have now rinsed the brine off and dried each piece before sprinkling well with a local rub. It is now in the refrigerator, covered, and hopefully soaking in some rub flavor. I have a large Egg and would like to eat about 5:30 PM Central (It's 12:30 PM now). What should I do next?

Spring Chicken,[p]Applying the spatchcocked chicken (chicken butterflied)formula: a 6 pounder took 90 mins. (15 mins. per lb) over 350 - 400 degree coals (direct). I would cook direct bone side done the majority of the cook. You might put the dark meat pieces on first, you'll want 165 for white and 180 or so for the dark meat. If your flames get a little carried away shut the dampers down for a few to control flames.[p]CC
