Pot luck suggestion? Cook hot, serve cold

I need to take something to a pot luck party at my office on Tuesday, and I'd like to impress everyone with something from the Egg. Does anyone have any suggestions for something I can make Monday evening, and serve cold Tuesday (or possibly microwave to reheat?)[p]Thanks to all

Personally, one of my favorite things cold is thin sliced london broil! Maybe you could even roll up some cream cheese and herbs inside each slice.[p]Just an idear on this rainy day.

If you have the link to TimM's or Gfw's sites, they have some good info on cooking LB. Basically you cook it like a steak. Pull off medium rare, rest it for 15. and slice thin against the grain. Save the au jus, and pour it over the meat before you chill. [p]Guinness stout, some garlic powder or crushed fresh garlic, and tons of pepper makes a great overnight marinade.[p]Again, just something that comes to mind as being good cold.[p]cheers
