Wardster,I myself have a batch marinating for a "drying" tomorrow..[p]You can go with wood for smoke if you like but I don`t bother, I`m more than happy with the outcome due to the flavors of the spices and ingredients....but more so, its a little tricky to keep the temps real low on its own without playing with opening the dome to add chips or chunks.[p]
