Veal Chop Advice

I'm going to egg some veal rib chops tonight using a variation of Mr & Mrs Spin's recipe in recipe section on this site. Got the chops at Costco (not cheap--about $30 for 4 nice ones). Does anyone have any advice/do's and don'ts re grilling veal chops? First time I've tried these kinds of chops.

    Jerr,[p]Veal chops cook more like pork chops than steak. They tend to dry quickly if left over a hot fire for too long. That is why the recipe calls for a quick sear of each side and then close the Egg down. Completely closed, the cooking temperature will drop as the meal cooks to doneness.[p]I believe the chops I used for the recipe were 3/4" thick.[p]Enjoy,
