My dutch oven chicken and rice

1 can cream of mushroom
1 can cream of chicken
1can cream of celery
2 cups rice
1/2 packet lipton onion soup
chicken parts[p]Mix the canned soups with the rice in the DO, place the chicken parts on top, and sprinkle the dry onion soup over the top. Took 1 1/2 hours, pulled when thighs reached 185. -RP

When I try this again, and I will because it really was good, I'll put a can of water in with the soups. The rice was just a tad bit dry. A bigger DO would help too to fit more chicken in. -RP

AZRP,[p]How big was the DO? About how long did it take to get the chicken to 185?[p]I may do one of those now that the weather is cooling. Good comfort food.

Fidel,[p] You really don't want to bring chicken breast to 185. 165 is sufficent.

Not sure what size it is but it is 10" across and 5" high. I could only get 3 leg quarters to fit. Took an hour and a half @ 350 dome. -RP

AZRP,[p] 2 cups of rice should have 4 cups of absorbable liquid. Concentrated Cream Soups don't have enough liquid for the rice to absorb. I would think that 3 cups should work just fine. [p] Chicken Broth might even be better.

I know they are safe, but I really like my dark meat and wings at 195-200. -RP

AZRP,[p] In that case start the chicken then add the other ingredients after the chicken is partly done.

I think if there was more moisture in the rice the carmalization wouldn't have happened, even taking the quarters to 185. -RP

Looks great, Randy! I have similar recipe that I add 1/2 cup dry sherry to that really zips it up......

looks good to me, i like carmelized rice. i would agree with the extra broth addition, maybe even have a little extra hot on the stove to drizzle down the sides of the dutch when things are looking dry. open top dutch oven cooking does lose more liquid than with the cover on.
