Pepperoni question.

I have some homemade pepperoni on the egg now. The recipe just says bake at 1 hour at 300. I'm looking more for an internal temp.[p]Mike

When I smoke cured sausage, I cook at 200 to an internal temp of 156. Where did you get the recipe? -RP

I agree with Randy. Cured sausage smoke at 200degrees dome temp to 156 internal temp. I have used this method many times for sumer sausage and even pepperoni. (venison peperoni)[p]cheers
