Leftover BBQ sause

I've got family comming over tommorow for spare ribs. I'm going to make some fresh NC BBQ sauce, but I also have some leftover from a couple of months ago; it's been in the fridge.[p]It's vinegar based, with katsup, sugar, and onion in it. I'm guessing it's probably still good, but does anyone have any cautions about the shelflife of homemade BBQ sause?[p]thanks

  • Skeeter Hawk,
I use my "left over" BBQ sauce for months! I purposefully do it that way too. Its a pain cuttin' up all the "extra" ingredients so I make a large batch and keep usin it til I have to make more. If its frigerated all the time, it will be like brand new![p]Good luck Q'ing and welcome aboard! I've been gone a while![p]Dr. Chicken

Skeeter Hawk, welcome to the forum "tim"! I have been seriously thinking about those FoodSaver vacuum gizzys, and with the fruit jar vacuum seal you could preserve em indefinitely. [p]Or at least really prolong the shelf life.
On the other hand if already hot you could do the standard method of canning as well.

    Dr. Chicken,
Thanks for that info. It says in a lot of the recipe books "keeps in the fridge for 30 days". But I feel silly dumping it down the drain. I'll start keeping it longer!! Iff anyone asks, you just say it is properly aged.[p]I mean, what's the deal?? All the sudden after 30 days, it just goes bad?? [p]NB

Dr. Chicken,[p]I pulled some leftover Gfw's sauce from the fridge from a few weeks ago to use on today's pulled pork. Actually it got even better with age.

  • Nature Boy,
I've kept some in the fridge for nearly a year. I questioned keeping it, and made some more. Then to see if I was ok, I tasted the two. No difference at all! Anymore though, it seems I can't keep it over 6 months, 'cause its all gone by then!
I've got one of them vacume sealers. My intent is to try one batch with it and but it in containers to see how long I can keep it. 'Course I'll have to refigerate it too, but maybe I keep it indefinitely! Who knows?[p]Dr. Chicken[p]p.s.: Only the Shadow knows!

Bob, amazing you should mention that BBQ sauce - I think tomorrow is the re-make day and I'll definately make a little of your variation for a test.
