Sorry - I've gotten out of the habit of photographing the food.[p]I posted the other night that it was 2:30AM and my fire was out and I wanted to let you know how it finished.[p]I went back to bed, got up at 6:30 and the dome was steady at 250 and the meat was steady at 163. It finally came off (190+) about 2:00pm after 17 hours so I foiled it, toweled it and put it in the cooler. [p]It was good! Now I know that the kids seem to love brisket!
