Reading a thread one time recently it was stated slow cook wasn't for
"A" types.Amen!!First Butt was taken off fire after 24hrs at 196,very good but 200 seemed far off.The dome started high at 300 but got it back to 250 after couple of hours.Set up was plate setter,v-rack in foil pan.Was it the v-rack someway causing the extra long cook?(Butt weighed about six pounds)
Thanks

    Jim,
V-rack had nothing to do with it. Each piece of meat is different. I've had a 10lb butt take exactly 18 hours to get to 200º and I've had a 5.5lb take 24 to get to 200º...go figure.
Part of the "allure of the Egg" is it gives you a chance to sit back and relax. Most Type A people obsess about making the temp EXACTLY 225º and maintaining it the entire time.
    Relax...enjoy
