A great friend of mine and I are haveing a friendly neighbor "cook-off". He cooks great ribs doing 1 hour indirect, 3 hours wrapped in foil and 1 hour with sauce. They are truely fall-off-the-bone. I am trying the 1.5/1.5/1 method on mine. I need to make the "perfect ribs" for this. Do any of you have any suggestions. I am using Dizzy Dust - no mustard slather and salt & pepper. My sauce is Rendevouz.

Carpetman,[p]I think 1.5/1.5/1 is a bit short.[p]I much prefer a 3/.75/1 to impart more smoky flavor and keep a bit of tug to the meat.[p]As long as you are happy with your prior results using your methods, I suggest run with it.

Fidel,
I do mine 3 hours indirect with applewood then i foil for about an hour with some apple juice in the foil. I finish them back on the grill for about 20 minutes with sauce making sure to turn often and not to burn as i sauce. good luck.

ugavet,[p]I second this method. I only change the last section to maybe 45 min to firm them up and get a good layer of sticky sauce on them.

Carpetman,
Any chance at all you can get some Blues Hog before then? I was at the Royal yesterday. It was everywhere.[p]Mike
