Blackened Mahi Mahi

Doing blackened Mahi Mahi sea Dolphin) on the egg tonight and a couple of racks of ribs tomorrow. Could someone suggest a time and temp for the Mahi Mahi. I think I will cook it direct using the grill and a stainless fish cooking tray I have.[p]As always, any and all suggestions wanted and welcome.

EagerEgger,[p]Be sure to oil, Pam, grease, etc. the fish pan. Cook direct at 400-450 if you want char or 350-375 if you don't. The high temp should take about 4 minutes per side. The lower temp would be around 5 minutes per side. Remember fish cooks really quickly and Mahi can be tough to get right as you can't undercook it and you don't want to over cook it.[p]I usually make my temp decision based on the coating, rub, marinade I'm using. If I really want to taste the outside, I use the lower temp. If I want to taste the fish with maybe a mango salso, I would use a higher temp.[p]Win

amini1,[p]I just re-read that and noticed you're blackening it. The traditional blackening is in a really hot skillet with butter. I like it on the grill also though. Just oil the fish, rub/shake the blackening seasoning on(I use Prudhommes) liberally and cook direct at around 450-500 for 4 minutes a side until opaque inside...a little more if it's a thick filet. It will smoke like a muther BTW.

Jeeves, Yep the whole place is building and booming. Luckily I live next to the Texas Crushed Stone Quarry, so they wont be building near us. The ground rumbles and shakes several times a week, but that's about all :-)[p]I think we talked about Eggtoberfest. Can't make it this year, but will make the Texas Eggfest at Lake Travis and maybe next year in Atlanta. If we go up there, I want to be sure and make Friday night and Saturday. Are you going?

man you're making me hungry! when i lived in florida.... there was a little beach restaurant that make the best blackened mahi and grouper sandwichs ever.... now if only i can find some good fish here in ne pa.....

ranger ray, I worked a Real Estate deal in St. Petersburg FL for 4 1/2 years returning to Texaas in 2006. I sure miss the fresh grouper we use to get right off the fishing boats and the Mahi Mahi sandwiches! Grouper with Thai green chili sauces is our favorite when we can get it here in TX.

EagerEgger,[p]Yeah, I'm going. I debated for a bit, but since it's the 10th year anniversary, and I deserve a little get-away, I went for it. The rooms were cheap and the airline was very inexpensive.[p]Have you heard how much it cost for BBQ University? Well I chaulk this up to an opportunity to learn some more of everything. I was going to try and get another egg, but I need some transportation for that.[p]In addition to the learning, it will be a great opportunity to meet those that won't make it to the Texas Eggfest..[p]-Jeeves
