I want to roast/smoke a 5 lb boneless pork loin roast. What temp and for how long?

  • BigTex,
You can do it just like an oven roast, 350 for about 18-20 minutes a pound (but I'd go by internal temp and pull at 145). I prefer to rub and cook at 275-285 with a lot of smoke. Pork loin has just enough fat to work well with this not-so-low-not-so-slow technique. This may take 3 hours to get to 145-150 internal. If it's done early, just wrap it and hold in a cooler for an hour or so. If it takes longer, serve another round of drinks.
