Suck Creek Wings,[p]Not a link, but simple instructions:[p]Indirect fire, dome 250*, ribs flat - I like mine on raised grid. Prep ribs in your normal preferred fashion.[p]Cook 3 hours, bone side down - no peeking. If doing spares then I usually do 4 hours here instead of 3.[p]Wrap individually in heavy duty aluminum foil. I add a heavy spritz of apple juice/cider vinegar. Beer works well also. Seal foil and put back on grid for an hour - more time in foil = more tender ribs. Too much time will make them mushy. I usually only leave them in foil about 45 minutes.[p]Remove from foil and return to grid for the final hour. During the last 30 minutes is when I baste with sauce on both sides and let it set a bit. Blues Hog is awesome on ribs.[p]
