I tried trimming up some chicken thighs last night. Am I on the right track?[p]trimingthethighs.jpg
trimedthighs.jpg[p]The skin was tough as nails. I need to work on getting that "bite through" texture. It always comes out to dark too. I'm thinking of smoking for an hour and then cooking them in sauce for an hour or two to get the skin right and back to the cooker for a bit to 'set' the sauce. That sound right too?[p]Here are some pics of the cook and finish
