What is Dwell Time
Alan
Posts: 72
I have done a lot of low & slow type cooking, but never a high temp cook, so please forgive my dumb question.[p]Some recipes call for x minutes per side and y minutes dwell time. From what I have read, I'm assuming dwell time is the time you let the steak or whatever sit on the cooker after you shut off the air by closing the top and bottom vents.[p]Is my interpretation of dwell time correct, or have I got the wrong idea? If I have the wrong idea, would someone please post the correct definition?[p]Thanks a lot,
Alan[p]
