How hot to Wok ?

Ok Ladies and Gentlemen...I purchased a wok and after cleaning and seasoning...I'm ready to stir fry! What initial dome temp would you use before ring on the grate and pan on the ring, so my wok heats rapidly. Thanks to you all.[p]Dr. H.

Dr. H.,[p]I shoot for the highest temperature possible when I use my wok with the Egg. One thing to know, I never close the dome of the Egg when I stir fry.[p]Puj

    Dr. H.,
I see you are a Mac user. There's a file I have I would be happy to send you in a rtf format. I think you should be able to open it.
E-mail me and I'll get some of the info I've picked up along the way...it sure helped me.

  • Dr. H.,[p]The proper way to wok on a Egg is to use a wok that fits the fire ring. You remove the cooking grid, lite the charcoal normaly and let the temp go to about 600 deg..
Then you open the dome and set the wok on the fire ring. This puts the bottom of the wok just above the charcoal. You will have a hot wok in about 45 seconds. Then just add oil, seasoning, meat and start stir frying. You can shut the dome in the when not stiring if you want the smoke to add flavor. Stir fry at its BEST!!!
