1/2 lb ground pork butt
1/3 cup finely chopped sweet onion
2 green onions with tops, finely chopped
2 tablespoons chopped garlic. Make it 3 if you like garlic.
3 tablespoons Wooster
2 tablespoons Mexican oregano
2 tablespoons thyme, dried
2 tablespoons parsley, dried
1 egg
1/2 to 3/4 cup of panko (Japanese bread crumbs)
Sea salt and black pepper to taste
Bacon strips (optional on beef, use with bison and venison)[p]Combine 1/2 cup of the panko with the other ingredients and begin to mix. Only add more panko if the mixture looks too loose. Form into one large loaf or two 1lb loafs or logs. Add bacon to the top. Cook indirect at 325° - 350° until the internal reaches 155°, let rest and the temp will rise to 160° or so. You can cook these in a loaf pan, plain or perforated, or on a disposable seafood or vegetable screen.[p]I break the USDA rules with respect to doneness, pulling mine at 150°.[p]

Ingredients:
1 lbs Ground beef - lean
1 lbs Sausage stuffing
1 cup Breadcrumbs - fine
2 Onions - medium, chopped
Fine
1 tbsp Curry powder
1/2 cup Water
1 tbsp Parsley - chopped
1 Egg - beaten
1 cup Clove - crushed
1/2 cup Milk
Salt and pepper to taste[p] SAUCE
1 Onion - chopped very fine
1/4 cup Water
1/2 cup Ketchup
1/4 cup Dry red wine OR beef stock
1/4 cup Worcestershire sauce -
Lea & Perrins
2 tbsp Vinegar
1 tbsp Instant coffee
1/4 cup Brown sugar - packed
1 oz Margarine
2 tsp Lemon juice
Procedures:
combine meats, breadcrumbs, onions, salt, pepper, garlic, parsley, curry and egg in large bowl.
2 Mix well.
3 Mix milk and water and add to meat mixture a little at a time until smooth but firm.
4 Shape into loaf and put into greased baking pan.
5 Bake 30 minutes at 375?.
6 Sauce: saute onions in margarine until golden and add all other ingredients.
7 Bring slowly to a boil, lower heat and simmer 10 to 15 minutes.
8 (great with ribs or chicken).
9 After loaf has cooked for 30 minutes, pour half of the sauce over the meat, return to oven and bake 45 minutes more, basting often with remaining sauce.
10 Serve loaf hot in thick slices with remaining sauce.
11 Also makes great sandwiches.
