Nice, quick dinner

<p />Hi, all,[p]I had a pork rib eye, an unusual cut that I have previously stuffed with good results. But I wanted dinner a bit faster, so I sliced it into chop-thick pieces. Then I got the Egg to 250, and put on a soapstone griddle. The idea ws to make "blackened" chops. Didn't get blackened, but was good.

When the dome had been at 400 for about 10 minutes, I put on a single piece of bacon, for a little lubrication. A few minutes later I plopped on the pork cuts, which were only flavored with salt and pepper. I turned them 3 times, each turn after 2 minutes, and took them off after a total of about 7 minutes.[p]This was fast enough that my wife hadn't quite finished with the salad. The meat was just crisp enough in places, and only one slice was a little dry.[p]With the mass of stone, the Egg was still at a dome temp of 250 after about 40 minutes. [p]gdenby
