Cornish game hen question

I butterflied two game hens ("spatchcock" style) & they're marinading in a citrus marinade. I eill cook them over Cherry & Pecan; would anyone recommend coking over direct heat or indirect heat?[p]Thanks in advance.

I cook them on a rack over a drip pan...350 to 400 degrees.

You can definitely do them direct in a 350-400 degree dome for that grilled effect. Just keep em off to the side a bit (close to, but not right over the fire) and turn them every 8-10 minutes for about 40 minutes. They'll be nice and cripsy golden brown on the outside and tender and juicy inside.[p]Good luck.

Birdman,[p]I like to start my game hens low and slow (direct) to absorb the most smoke. Then I crank up for the final browning. If you don't like a lot of smoke flavor, direct grilling works fine with a game hen. Just don't get your temperature up to steak heights, though.[p]
