Car Wash Mike, We are doing a single rack of babyback ribs today. Just the two of us here. Longhorns won (barely) against what I think was a really good Central Florida Team. Will watch the Colts and Nascar today while the ribs are on. Using the 3-1-1 1/2 method for the first time.

Watching the chef might be more fun than watching the Chiefs!
I have a rib question for you. The end ribs tend to dry out on me and are the least appetizing, so I try to keep racks full length and bend them around on the rib rack to have fewer end ribs. You cut them down to fit the rack, without regard to how many end ribs. So- I'm thinking you must have some way to keep those end ribs from drying out.
What is your secret, please?

I will foil ends if necessary. Also check where your plate setter is in regards to the end of the ribs. Is it an open area? If so, can you move the rack over the leg piece of the plate setter?

Do you wrap the ends in foil first, or when the start to look more cooked than the rest?

I just cut the ends off so they are not hanging over the plate setter. When I'm cooking 6 slabs I place the ones I cut off on the top. When I was putting the racks on whole, I would cut the ends off early before the rest of the rack was done.

I do it at the start. Just loosely in foil. So that they don't burn and dry, but still get cooked from the heat coming down from the dome.

EagerEgger,[p]I was so excited for the upset. You should have seen me every time they posted the t.u. score I was jumping up and down because I love to watch the horns lose. Thanksgiving at my house last year was one of the best I can remember![p]This year my wife and I are already arguing about the turkey. She wants fried again and I want to do the bird in the egg. We've fried for the last 5-7 years. Now with the egg, I'm ready for a change.[p]boz.

Just home from Church and got the fire going and just put on several slabs. Watching the Royals and they are winning at the moment against Cleveland.[p]The Chiefs go up against the number 1 defense. Mary coach will let Larry run 30-35 plays and he can wear them down. HaHaHa.[p]Enjoy the afternoon.....
