A TIP - Save Your Egg-Mates

Apply mineral oil to your eggmate shelves to give them a new lease on life.
They recommend this stuff for wood cutting boards, wooden spoons, etc.
I applied it to my Egg Mates and the result was like an infomercial.[p]The old weathered wood came back to life and looked new again. I highly recommend this treatment.[p]Cooked chili and cornbread today. Temps are dipping into the 40s tonight. Love the Fall!

Indeed I did. Same temperature and recipe as you would use in the oven. The key is to make sure the fire has been burning clean for awhile. I don't want my cornbread to taste like smoke.[p]The chili cooks for 3-4 hours at 300 degrees. Then I bump the egg to 400 and cook the cornbread in a Pampered Chef stone 9x9 for 35 minutes.
Meanwhile the chili sits on the stove cooling just enough so I can eat it without scalding my mouth.

I've got a replacement gasket in the closet but really don't have any problems with that burnt up one.[p]The cornbread was "Ass-Kickin Cornbread". Off the shelf stuff from a company that makes sauces and chili mix. Honestly, it wasn't very good. We prefer something a little sweeter/more traditional to offset the spicy chili.[p]See you in GA!

You can order the best stone ground corn meal from "the Old Mill" in Gatlinburg, Tn. They will UPS it to your front door and it is fantastic. If you like good corn bread, then you'll love this stuff--it is not a mix; you'll have to follow a recipe.
