temp, time, to cook 8 pound capon

reading a few recipes--notice radically diff times for how long this will take--one recipe said it took 7 hours at home--much less at eggfest
well folks are coming at 7 and it is 1--help

    I'm guessing that the difference in times for recipes depends on the temp used. Think of the egg as an oven. If you cook an 8 pound capon at 325, I'm guessing 3 hours. I'd use a thermometer. The breast should be 160 and the thighs 180. If you start earlier, you could drop the temp to about 275-300 and get it done in maybe 5 hours. Same temps for doneness.
