Tailgate ideas - looking for somthing different?

Don't get me wrong, I love the standard brats, ribs, burgers, etc. but am looking for something different. What's your favorite tried and true recipe?

    nascarman,[p]Here's one we cooked for the Jets-Miami game a week and a half ago. It follows a recipe posted by KennyG. This is my version of the finished product (I never tied it up or anything. I simply flipped and handled gingerly to minimize the cheese ooze).     Are there any hot pepper enthusiasts out there? If so, I've got to share the recipe from dinner last evening. Courtesy of the Mike
    Anderson's Restaurant (New Orleans) cookbook.[p]For a pair of pork tenderloins (usually 1 package and 2-2.5 lbs of meat)[p]Marinate 2-4 hours in a mixture of
    1 cup soy sauce
    1/4 cup honey
    2-3 Tbs. cajun seasoning such as Prudhommes, Essence of Emeril, etc.[p]Pull from fridge and allow to approach room temp and make a cut lengthwise in each loin not quite all the way through (much as
    you would cut a sandwich roll)[p]Spread a light layer of softened cream cheese in the pocket you've created and arrange some thinly sliced jalapenos on top of the
    cheese. Now fold the loins back together and grill over a hot fire of 600* or so. A wide spatula comes in handy here. I used cherry
    chips for firespice. It was wonderful blend of flavours (hehe) although maybe too intense for the unaccustomed palate. I may make

    Cornfed,[p]Thanks for the reference. As I seem to recall, you are an accomplished pepperhead yourself. I'ved also done this one with habeneros (minus seeds)to really kick it up a notch. It was one of life's significant emotional events, kinda like your very first beer.[p]K~G[p]

    bdavidson,[p]We've been very good this year. I have some more pics from the Jets-Rams tailgate to post. You should have seen all the stuff we had at that game. ST's burgers, cajun shrimp, wings out the yin-yang, grilled taters, mozarella/italian bread/tomatoes, blue fish, grilled chicken sandwiches, etc. It was an enormous tailgate with boatloads of people. It kinda felt like Eggfest...[p]Later,

    Last tailgateing adventures included: Pulled Pork Nachos Yellow corn chips, cover with pulled pork, drizzle with BBQ sauce, cheese sauce over top and Jalapenos. Killer. Pulled pork quesadillas, Flour tortillas, Pulled Pork, Salsa and shredded cheese, Grill untill warm and almost crispy. Smoked Italian sausages, cut into chuncks, put on toothpicks with green and greek olives, glaze with sauce or mustard while grilling. BEER, put in glass and drink large amounts.
