Roasted potatoes

So after getting advice on a Rosh Hashana brisket from the master (Thanks again Max and all who responded). Now I need to decide how to make the sides.[p]I'd like to make some nice roasted potatoes. I saw the recipe for "Julies Taters" in the recipe section and will probably do something along those lines, but if anyone has a favorite potato recipe they'd be willing to share< I'd be grateful.[p]I'm looking for something delicious (obviously), not too difficult (I can handle complexity, but I have a lot to do tomorrow), and that has a little WOW factor... something a little more than plain roasted taters.[p]Thanks

    ok, for simple yet tasty. . . .take baby redskins or yukon golds. . ..basically quarter them up (small cubes), toss in olive oil, rosemary, kosher salt and pepper (or somethign like a little dizzy raging river rub), spread out in a pan and roast in the egg or oven at 425 degrees for about 35 minutes, tossing them around once or twice, until browned on the outside, soft in the middle. .. [p]for a little more complicated dish, try a potato gallette.. ..saute some mushrooms, thin slice a couple of large russets. .. .get a cast iron pan hot, put a little olive oil in the pan. .. spread a layer of the potatos in the pan in a fan design, add some salt and pepper, layer in the shrooms, top with another fan layer of the taters. ..brush some olive oil on top of the top layer... .when the bottom layer just starts to brown (you have to peek with a spatula. ..lay a piece of heavy foil on top of the taters, and put a heavy pan on top of that. ..then into the egg for about 30 minutes at around 375 degrees dome temp. ... remove from egg (now for the tricky part) .. .turn the whole thing over onto a plate, then slide it back into the cast iron pan, and the whole thing back into the egg for about 15 more minutes. ..should be nice and brown on top, taters tender in the middle....looks fantastic and tastes great. . .[p]DSCN0868.jpg

    Here is a method we used last Sat. at the tailgate party that everyone raved about and it is dead simple.
    I slice the potatoes longway into six or eight slivers, depending on the size of the potato. Place them on a piece of heavy duty foil then toss in a couple of carrots and onion slices, salt and pepper to taste then a little butter. Sprinkle it with a few drops of water then seal it all up in the foil. Goes on a medium hot egg for twenty minutes. If you wish to turn them over at the ten minute mark you may but you wouldn't have to. We use this method at home all the time and really like it. Bucky

    Real easy.Twice baked taters.Punch holes all,over with fork,rub evoo and sprinkle koshersalt to cover.Bake,cut in half and scoop it all out and mix up some grated cheddar cheese and mash it with a fork and stuff back in the shells,Sprinkle a little green onion(chives) on top and reheat.Enjoy.
