Tim,
I saw your post a couple of days ago and doing one for dinner tonight.
Plate setter for indirect cook, vertical roaster with drip pan. Same time and temps as your set up?[p]Any other thoughts will be appreciated!

    <p />Shelby,[p]The plate setter should be fine - I used a vert roaster once and have used the V rack ever since. Personal choice I think there. I go about 350 deg for a couple hrs until Mr Polder says 160-165 in the breast. Good luck. One note of caution. If you like smoke flavor then toss in some pecan but you need very little and using none at all is fine with me. Foul absorbs the smoke easily and a little can do a lot.[p]Picture show an 8 lb breast after 2.5 hrs at 350. A light olive oil coat makes it brown nicely.[p]Have fun[p]Tim

    Going with v-rack after all. Since there's little of the body except the breast (duh!) it wouldn't sit right on the vertical roaster.
    Look forward to your thoughts on a whole turkey later as I'm sure we'll have lots of threads closer to Turkey Day.
