Stuffed Veal Roast

I bought an Italian stuffed veal roast (bracciole style).[p]The butcher suggested 2 hours @ 350 but that seems a little hot for the Egg.[p]Any suggestions for cooking temperature and type of smoking wood?[p]Thank you in advance.[p]Hatchling.

I think that 350 is probably fine. If it were me, I would put a roast rack inside an aluminum pan and cook it that way. I would not depend on the 2 hour limit as being the firm basis for the cook time. I'd start checking the temps after an hour and make adjustments to time or temp as necessary.[p]I am not familiar with the stuffing, but I would suggest going with something not too heavy on smoke flavor, like apple.[p]
