Here's the recipe. My comments at the bottom.[p]
Tequila Lime Chicken [p]it's supposed to taste like Applebee's, but I haven't been there.[p]Marinade
1 cup water
1/3 cup teriyaki sauce
2 tablespoons lime juice
2 teaspoons minced garlic
1 teaspoon mesquite liquid smoke flavoring
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 cup tequila
4 chicken breast fillets[p]Mexi-Ranch Dressing
1/4 cup mayonnaise
1/4 cup sour cream
1 tablespoon milk
2 teaspoons minced tomato
1 1/2 teaspoons white vinegar
1 teaspoon minced canned jalapeno slices (nacho slices)
1 teaspoon minced onion
1/4 teaspoon dried parsley
1/4 teaspoon Tabasco pepper sauce
1/8 teaspoon salt
1/8 teaspoon dried dill weed
1/8 teaspoon paprika
1/8 teaspoon cayenne pepper
1/8 teaspoon cumin
1/8 teaspoon chili powder
dash garlic powder
dash ground black pepper[p]1 cup shredded cheddar/monterey jack cheese blend
2 cups crumbled corn chips[p]
Prepare marinade by combining marinade ingredients in a medium bowl. Add the chicken to the bowl, cover and chill for no more than 4 hours. [p]Make the mexi-ranch dressing by combining all of the ingredients in a medium bowl. Mix well until smooth, then cover dressing and chill it until needed. [p]When you are ready to prepare the entree, preheat the oven to high broil. Also, preheat your barbecue or indoor grill to high heat. When the grill is hot cook the marinated chicken breasts for 3 to 5 minutes per side, or until they're done. [p]Arrange the cooked chicken in a baking pan. Spread a layer of mexi-ranch dressing over each piece of chicken (you'll have plenty left over), followed by 1/4 cup of the shredded cheese blend. Broil the chicken for 2 to 3 minutes, or just until the cheese has melted. [p]Spread a bed of 1/2 cup of the tortilla strips or crumbled corn chips on each of four plates. Slide a chicken breast onto the chips on each plate and serve with your choice of rice, and pico de gallo, or salsa. [p]Yield: 4 Servings[p]Gwen's notes:[p]I left out the mesquite Liquid Smoke stuff cuz I hate it. I didn't have any mesquite wood or I would have used that on the fire.[p]I used 5 breasts and about 9 drummettes and had plenty of marinade and sauce for all that. So you can certainly make more than 4 breasts.[p]I do not like really spicy so I left out the paprika, cayenne pepper, and chili powder. I know, I'm a wimp. [p]I don't have a broiler so I put the chicken breasts on a pan, with the sauce and cheese, and put it back on the egg for the cheese to melt. It was WONDERFUL. The drummettes we served plain with the sauce. For the drummettes, they needed the spice in the sauce that I left out to give them zing. Next time I'll add in the spices. I'm sure it'll be to0 much for me so I'll experiment over time on getting the right amount. This was so good it'll become a regular meal for us. I wish there weren't so darn many ingredients in that second part tho![p]We just had them alone. We were trying to figure out what else we could serve with it. Red beans and rice? Shredded lettuce with tomato and avocado, not sure what kind of dressing.[p]It was really really good. I'll probably make it for the PNW eggfest next weekend.[p]Gwen[p]

    We just got done with the weekly movie night makin' pizzas on the egg. I did a bbq chix with fresh mozz and some herbed sauteed shrooms, ate the whole thing myself. I will make one up for you next Sat. if you are making some of that Tokillya chix. especially if you have the Margiwawas to go with! Got all of my e-mail info today about the Fest, have a few questions, but will e-mail them direct. Take care and see you next weekend!

    Yes, I'm going to make that next weekend. It was just too yummy for words. Along with meatloaf. And teriyaki drummettes or some kind of drummettes. And maybe the NY Times No Knead bread. I haven't perfected that on the egg yet but standing around with nothing to do but bbq may be just the time to work on it.[p]So what movie did you watch? According to one source, I'm a movie slut because I'll watch any movie, any time, any place, with any person. LOL That's not 100% true. There are some movies I won't watch. I did not go see The Simpsons at our little movie theater this weekend.[p]I hadn't thought about margiwawas! Technically I think we're restricted to only wine and beer but I sincerely doubt anyone is going to come and check. We'll have to sneak them because I won't be able to bring enough for the whole class. Let's bring our coffee mugs and no one will be the wiser! (But they'll be wondering why you and me are having so much more fun than anyone else! [p]Gwen

    Sounds good Gwendolina! Though I may have to defer to Irish or Mexican coffee in my coffee mug for appearances sake (hmmm, Jamesons or Kahlua, tough choice) and leave the margiwawas in my 'water' bottle... We watched 'The Three Amigos' from the 80's with Chevy Chase, Martin Short and Steve Martin. It is hard to find a movie a week to watch with the kids that we don't have to fast forward through too much and keeps us supposed 'adults' entertained too. [p]I guarantee we will have some fun, besides who else will be there in a kilt? I will, in a stunning tan duck utilikilt ( www.utilikilt.com ) and my old chef's jacket, quite the combo. I am also going to be playing with some breads if I have the time on the egg, we can compare notes.[p]Whack
