Plans for ELK Steaks

Well, the ELK steaks are thawed as of yesterday and they are HUGE. Thin but HUGE. They are about 3/4 inch thick and about 18-24 inches long (really, they are huge) and about 7-8 inches wide. Look like awesome steaks and I'm pretty psyched to cook them. I've had them marinating in Andreas sauce for 24 hours now, plan on cooking them tonight, quick sear and dwell for a few minutes. They feel amazingly tender and are actually marbled pretty nicely. Having a few friends over to share the steaks, hopefully they'll come out well. Absolutely no "gamey" smell at all, unlike venison that I can smell a hundred yards away.[p]Thanks to everyone for ideas and input.
