all we have is morning dove around here. Took my 9 yr old and he had a blast. Now, i just need a recipe that makes them worth eating. Any recommendations?

I was remember a question a year ago a guy had about cooking quail. I gave him several cornish hen recipes from here plus one that some posted in reply to my question about quail for him.[p]Here is the quail recipe.[p]Quail, Bacon Wrapped, Stuffed
6 Whole Quail
3 Cups Cooked Rice
½ Cup Pignole, Pine Nuts, Peacans, Walnuts, your choice
½ Cup Chutney
¼ Cup Scallions
12 Pieces Bacon
SAUCE
1 Jar Raspberry Jam 4-6 Oz. or Orange Marmalade
Dijon Mustard
Balsamic Vinegar
Lemon Juice
Salt/Pepper [p][p]1 Cook Rice, Basmati or Jasmine preferred, Use 1/3 orange juice by volume of total liquid used to cook rice.
2 Mix cooked rice w/ nuts, chutney, scallions, stuff quail, works well w/cornish game hens, just takes more. ingredients to stuff birds. Use: pepper, salt,poultry seasoning whatever you like for rub.. Stuff birds w/mixture.
3 Wrap birds w/bacon , may take 2-3 pieces to totally wrap birds. Skewer w/large tooth picks or something else to hold the bacon.
4 Place in oven baking dish on rack to keep drippings underneath or place on BGE and grill using indirect method. Bake 350-375 F for 40-50 minutes till bacon is crispy, Start birds breast down, "V" rack works well and turn breast up 1/2 way into cook.
5 Sauce: Mix the sauce ingredients in a pan on low heat, add raspberry jam first. Tablespoon Dijon, Tablespoon Balsamic vinegar. Lemon juice and seasoning. Bring to slow boil and stir; adjust to your tastes. Orange marmalade may be substituted for the raspberry.
6 Rest 10 minutes. Serve. If Egging be careful not to let the drippings flare and burn bacon/birds. Great reheated next day. [p]

I remove the breast from the bird, and then strip off both sides of the meat. This gives me 2 what I call fillets. Next I just make ABTs with them. If you don’t like the Jalapeno included, just skip the filleting part and fill breast cavity with cream cheese and wrap in bacon and cook at 375 direct for about 35 minutes or until the bacon is crisp. I am using the ABT receipt on the birds I got this weekend.
Glad you and your 9-year could spend time together in the great outdoors. You are creating memories that will last a lifetime for both of you.

I like to keep it pretty simple with doves. Sometimes i remove the two haves of the breasts and sometimes I leave the whole thing intact. But I usually marinate in italian dressing and dales(or moores) and then season with salt pepper and garlic. Wrap in bacon and put them on skewers and cook fairly hot(maybe 400) till the bacon is done.

i just pan fry the breasts in some butter and olive oil at a relatively high heat....then de glaze the pan with some wine... toss in a bit of fresh parsely...(salt and pepper and a dazh of dizzy pig of course).... simple quick and easliy learned by a young cook.... rr
