Thermometer calibration

I just got BGE Thursday and did a triple rack of pork ribs Saturday. They were good but a little dry (200 degrees for about 6.5 hours rotated once sprayed with apple juice a couple times used platesetter) Since I thought they were a little overcooked, I decided to check the thermometer by putting it into boiling water. It only registered about 150 - 160 F (~75 celcius)[p]I guess there is no way to adjust the thermometer but is it safe to assume it reads 40 degrees low and cook ribs at 160 ane everything else at 40 Deg less on thermometer than I really want... should I ask BGE for replacement or is it normal for thermometers to vary considerably?
