BIG Brisket Question -- Help!

Getting ready to put my full brisket on the Medium, which allows 15" of width.[p]This trimmed, 12lb brisket sticks waaaaaay out of the Egg.[p]Suggestions, please -- [p]Where to cut?
How to set up [I have a plate setter, ceramin grid, cast iron grid & grid extender][p]Do I sear this thing first?[p]~ Broc

Some have created an 'upside down' U, like a roller coaster, using the grill extender..[p]Plate Setter, with drip pan and water, combination of beef broth, water, etc... Ceramic Grid, then the Grill Extender.[p]No, don't sear.[p]

<p />Broc -- near Omaha,[p]Here is the drill....plate setter legs up, drip pan, grate sitting on plate setter legs. Stick a beer can (empty) under the brisket which will bring the sides in. In 2 or 3 hours it will shrink enough to remove the can. Shield the edges of the brisket with foil since it is beyond the plate setter.[p]~thirdeye~

Broc in Council Bluffs,[p]Yes, drap it over.[p]You can try the can version first. If that doesn't work, either find something taller/wider or try the extender. Same idea - to provide another mass that can extend the draped brisket UP and slope down, trying to utilize the space efficiently.[p]-Jeeves
