Pig Candy?
Hi Gang, Since first visiting here a few months ago I've prepared a number of batches of "Pig Candy". One part I've come to hate is trying to spread the sugar evenly over the bacon strips without it winding up all over the place; the counter, the floor and/or my feet! Yes, I'm a barefoot cooker, but in no way connected to the Food Channel, or Long Island... 8 - ) Today, I tried a different approach, and mixed equal portions of brown sugar and PURE maple syrup to make about 1/2 cup combined. I was able to brush the mixture on the bacon strips with ease and the result was a rather interesting combo of sugary, bacon crisps. I would love to hear from anyone who might have tried a similar method.[p]Happy Holiday, Rascal

Rascal,[p]That sounds good.[p]How about heating up some karo with the brown sugar to a thick consistency, letting it cool, load into a plastic bag, cut a tip off as wide as needed, then piping onto the bacon?[p]I was just thinking of this just in case you wanted something neutral (or other than maple) to use. Another >possible< option is using simple sugar (more sugar than water to have it thicker) as the base, then thickening it even more with the brown sugar.[p]I'd give it a shot, I'm still looking for those aluminium thing-a-ma-bobs at Wally World that's mentioned the TNW site![p]-Jeeves

Rascal,[p]I do a dredge. I let the bacon come up a few degrees after it comes out of the fridge and it gets a little moisture on it. Instead of sprinkling it on I put the sugar and spice in a pan, then put the bacon on top, pressing lightly, flip and repeat, then onto the grid.[p]

heheheh... i have a secret egg implement provider... an egg fairy if you will.[p]the grid holder was made by none other then the famous thirdeye as seen at a popular foodie blog and forum near you.[p]the rack is just a wire cooling rack used outside the egg to cool biscuits and breads on.[p]

I'm still waiting on my flowers.....those guys know I'm totally into that mushy crap.[p]anyhoo - who is the egg god?? I think I need those doo-hickeys for my egg too!![p]Oh, and trust me, I've learned a TON this past few days!!

yep... but i wouldn't recommend it... there was a dark yellow smoke covering it. it came off with a good scrub, but a cheap aluminum pan will work with no cleaning required.[p]the bread was killer though[p]<img src=http://my.erinet.com/~pnsonr/biggreenegg/28oct06-064.jpg>[p]

I'm late to the party but what I do is mix the rub and brown sugar really really good so that all the brown sugar is really broke down and not "boulder like". I cook it over an improvised foil pan and after flipping just use my fingers for control and sprinkle the rub/sugar mixture on. I don't think that you lose too much of the mix that way.[p]H
