Looking to cook something at home for a sunday bbq somewhere else. Unless it can be heated on a gasser and still be good, it needs to be room temp. Cannot be pork butt or brisket, because I will not be home until about 2am sunday(day of).

    i made meatpies last night, about 9 of them to have some for lunch, ate them all last night. do a search for sfeeha, basically 4 inch flattened rounds of pizza douh, place 2 tablespoons filling in center and fold up and pinch 3 sides of a triangle leaving the center slightly open. cook at 450 til golden on a stone. the filling was double ground lamb 1 pound, 1.5 minced and pressed to dry onions, about a half tablespoon of allsice and grand masala, some fresh grated nutmeg and a squirt of lemon juice, a 1/4 cup lebanese natural yogurt, and a quarter cup of pinenuts browned in butter, salt pepper. serve with yogurt or lebne if you can find it. this is enough for 16 pies, can be served cold, but warmed up is better.

    It's not quite as good as low and slow but it's still pretty darn good, better than most will ever eat. I did an 8 pounder the other night in 6 hours at 325-340 degrees, just keep a close eye on it after the first 3 hours or so. About every hour I'd fill my drip tray with Apple Juice and it really was good and pulled easily.
