Just Some Simple Red Beans and Rice

A couple of Saturdays ago, I felt the need for some Red Beans and Rice. I made the recipe as I normally would in Cast Iron Dutch Oven. Instead of leaving the pot on the stove, I transferred it to the egg with a nice chunk of hickory. Three hours later at 275, we were eating well. I had loaded the red beans down with some great Anduolli and Tasso Ham. KennyG even stopped by for a bowl. The only thing that was missing was a loaf of warm French Bread.[p]I left lid off of the Dutch oven and the smoke flavor was very nice.[p]Just sharing,
