Brine for Turkey

I''m doing a 16# turkey next weekend for the Canadian Thanksgiving. I understand that you there are a number of brine recipes that you can use for turkey. Any suggestions as to recipe and timing.[p]Tx in advance

    DickO,[p]A simple brine is salt and water only. A good all purpose brine mixture is 1 Cup kosher salt, 1 cup brown sugar, and 1 gallon water. Herbs, spices, and other flavorings can be added to the brine and tend to add a delicate flavor to the end result.[p]Brining times for your bird should run 6-12 hours.[p]Spin

    I've had excellent results with this brine recipe.Adjust seasonings to your taste. I'll brine 12 hrs or more with no problem with this recipe. Just rinse well after brining. About 15 min. per lb. on the egg at 350 dome for a brined bird. Use thermometer for final temp, or shake a leg as they say. You'll get many responses on this and its a taste thing, they all work.

I can't remember who posted a couple of weeks back about this, but I kind of feel like it's time for giving some thanks a little early this year. So, I'm cooking a big bird to share with my friends and family (no, not THE Big Bird, just some big bird I saw at the store. I'm a big fan of Big Bird, and I'd find it inconceivable to cook him. Also, Snuffleuppagus (sp) might get upset...).[p]I've never brined a bird, but this might be the time to try...[p]Later,
