I would try Beer Butt chicken. 350 direct. Rub with EVOO the a nice rub.[p]I would use turkey parts. Soak in Buttermilk, then rub and cook indirect 275-300.[p]Poultry soaks up smoke flavor quick so be careful on how much wood you use.
Do you have a plate setter?
As far as ribs. Get others advice, especailly if this is your very first time.

Yup. Bringing my 10 yr old grandson who worked with Lucky Duck at the Eggs by the Bay cooking pizzas. He's hooked.[p]Am still debating whether I am going to cook tri-tip or not. Think that Texas outfit would let me sneak in like you did last year? It is my understanding that Chubby runs a pretty tight ship and can be very picky.
