Friends are coming in one hour, was going to try Steak Florintine. Basicly a seared steak. The steaks are porterhouse 1.75" thick. Door open or door closed? Grill is on firebox that puts steak about 1" above fire>

    sears are pretty short events. if you want, shut the door when it is up to temp but keep the lid open. i found that the naked whiz's notes on cooking paella had a really cool twist. lid-open high heat (with the lower vent shut). the coals really spread out and all were roaring. was a bit of a revelation.[p]still, you could always sear with the vent open and dome shut.[p]that close to the lump, like you are, you're only gonna be there 90 seconds at most. anything more and you are eating charcoal with a steak center.[p]
