Brisket - Help!!!

Could someone please tell me how to cook a Brisket? I just bought 2 of them from the local meat market and I would like to smoke them in my Large BGE, but I'm not sure what temp and for how long... Bacon on top? I was thinking about cooking at 220 for about 1 1/4 hours a pound. Any suggestions? What about Char Crust??

    Howdy. I always try and find a chunk with a good fat cap, and cook with that up. No need for the bacon if you have a fat cap. Yeah. About 220-250 will do. More like 2 hours a pound, but time is more a function of the thickness. A 3 pound flat can take 10 hours...where a 10 pound whole chunk-o-chest might take 14-20. Give it time and let 'er ride. [p]Have not tried char-crust, but your favorite rub will do fine. The main flavor comes from the extremely flavorful cut that a brisket is.[p]Enjoy it. Don't git much betta.

  • Sam I Am,[p]I did one a couple of week ago using a whole brisket my wife purchased. It was trimmed a little too much so I went to my local supermarket and asked the butcher for some beef fat. He gave me enough to cover the top of the brisket...of course he didn't charge for it.[p]Follow Nature Boy's recommendation re. time. When I did mine, I underestimated the time. I had guests already over for dinner so we had to have another drink or two because of the delay. Of course no one seemed to mind, probably due to the extra drink and the excellent dinner.[p]Peddler
