Monte Cristo sandwiches, soapstone griddle and Egg

<p />Hi, all,[p]fishlessman made several posts showing foods cooked on a soapstone griddle, most recently Monte Cristo sandwiches. They looked really good to me, and after reading around a bit, the soapstone griddle looked like a worthy companion to the Egg.[p]First, the soapstone is dandy. I seasoned it like a piece of cast iron. The claims that it is almost stickless are true. Cooking something as gooey as cheese mixed with egg was no problem even where there was almost no butter under. Much better than any non-stick cookware I've used. Supposedly, the stone will last generations.[p]On the first use, I didn't let it pre-heat enough. The 12 pound 12 inch stone needs at least ten minutes direct on a raised grill at 450 dome to get sizzling. Once its hot, it really stays hot, and flipping the sandwiches every few minutes didn't slow the cooking. However, the dome temperature was mostly between 450 and 500.[p]The Monte Cristos could have gone maybe a minute longer. I did some last night, and let them blacken. They had too much of a burnt egg taste for me. This time, they could have gone another few minutes. Total on griddle time was a bit under 20 minutes, turned on both sides and on edges to crisp all around.[p]Served them with the classic rasberry jam. My wife was delighted, saying it was like the main course and cake altogether. Last night I had them with honey, and that worked well, too.[p]Now, if I can just avoid any more cholesterol for a week or so,[p]gdenby

    You must come to Atlanta with that traveling show.....and save a piece for me and the misses.......maybe I'll even share it with her :>)[p]That is simply wow wow wow. I've had those a time or two when out to eat. I"m thinking my braising pan (cast iron coated with enamel should work.[p]ps don't worry about the cholesterol that is what pills are for ;>)
