squirrel and fish thoughts

With hoop nets in the water and Indianas squirrel season in I was wondering if anyone here has cooked squirrel in their BGE before. How and what did you do?
I also commmerial fish and catch alot of catfish and buffalo. I have grilled alot of catfish on my egg but wondering if anyone has any other ways of cooking them. I cut the ribs out of the buffalo[fish] and either fry them or smoke them. They are awesome to eat. Any thoughts or receipes would be appreciated.
I'm looking for a good tender squirrel from my egg.

    This recipe can be cooed on the egg.
    Larry[p]Yankee’s Cat Fish Stew[p][p]3 lbs catfish, cooked & de-boned (fillets are easier!!)
    4 slices fatback
    3 lbs potatoes, peeled & thinly sliced
    3 lbs onions, thinly sliced
    2 tbs salt
    2 tbs pepper
    hot pepper sauce[p]Boil catfish (reserving broth), de-bone and set aside. Over high heat, in large Dutch oven, brown fat back. Lower heat; discard fat back (or when no one is looking, eat it…it’s delicious & once a year won’t kill ya!!), leaving drippings in pan. Add one layer of potatoes & one layer of onions. Top with all of the fish. Repeat layers of potatoes and onions. Pour about half of the broth over top. Add several dashes hot pepper sauce & salt & pepper. Do not stir!! Cover and let simmer for approximately 2 hours. Just before serving, stir well. Yield 6 to 8 servings.[p]

    do a search for squirrel paella. stike did one with rabbit that looked real good, squirrel would be a good substitute

  • randy merta,[p]Hope there is a BIG limit on squirrel's. One has to catch a lot to have a full cook of squirrel legs on an XL.[p]Wonder if there is a mini, mini, mini BGE.[p]Seems squirls are like hunting dove. One #9 shot in the brest doubles the weight of the brest. Good eats though - then dentist to replace the cracked tooth.[p]

  • randy merta,[p]It is hard to beat a good tasty smoked possum on the egg. I must eat 2 or 3 of these a week. I smoke with oak and hickory and the rub of your choice.
