Rib problems.

I've done ribs using the 3-1-1 method a number of times and had GREAT luck but have always done them straight through from start to finish. This past weekend I had company coming for dinner and decided to have ribs. However, due to another committment in the afternoon I modified the normal process and only did the 3-1 portion and took them off after their hour in apple juice. Put them in the fridge for about 5 hours and then returned to the egg, direct 250, for their last hour and a half (left extra becasue I was restarting cold). To a non-egg person they were very good but to me they were dry and never got to the fall off the bone stage.[p]I'm wondering if these were just not great ribs or if I should have taken them off the egg prior to the juice bath stage? I'm pretty sure I've read posts from other eggers saying they have doen interrupted 3-1-1 and had good luck. Looking to see what others' experiences have been.......[p]Thanks in advance for your thoughts.[p]TJ
